Strawberry & Cinnamon Crunch Crumble

Ok so this looks good, but does it taste good…… Er yes! It's so quick to make, yet tastes divine. A first glimpse into the pan sees a mix of red vibrant strawberries, alongside darker summer berries. Together with the darkened sweetness of rich brown sugar, this wonderful fruit blends & balances without the course sweetness white refined sugar often gives.

 

Crumbles are a mainstay in our house. I remember as a child, learning the “correct way” to do a rub in mixture. “Keep your fingers light and high” and don’t warm up the butter too much….. Proving there were no lumps in my mix, and powdery in texture was the height of perfection….. How we were missing out. Take a little more butter add a handful of rolled oats with cinnamon & dark brown sugar and allow the sweet clumps to form. Suddenly this crumble mix takes on a whole new taste sensation.

 

The great thing about crumbles is they can be fantastic for growing children, getting wonderful fruits into their diet in all seasons of the year. But add little twist here and there: nuts, a change of fruit, a little spice perhaps and suddenly you have an awesome dessert for your dinner party with friends. They are so easy to make, flexible and versatile to create, using whatever seasonal fruit you have at home. Wow your friends this strawberry season….

 

Ingredients

Cinnamon Crunch Topping

  • 200g plain flour
  • 200g oats
  • 180g butter
  • 130g brown sugar
  • 3 teaspoons cinnamon

 

Fruit Filling

  • 250g halved fresh strawberries
  • 500g Raspberries, Blackberries , blackcurrants, cherry, blueberry mix (as desired)
  • 80g brown sugar
  • 1 1/2 tablespoons cornflour

 

Total Time

Prep: 20 min. + Cooking / Bake: 15 min. 

Makes / Serves 8-10

Method

 

Cinnamon Crunch Topping

1. Weigh out all the ingredients for the topping before you begin.

2. Heat oven to 200C/180C fan/gas 6. Put the flour, oats and butter in a bowl. Use the rub in method to bring the ingredients together, without it getting too sticky. (TIP: Try blitzing on pulse setting in a food processor using the dough hook attachment -careful not let it run too far as the consistency will deteriorate).
3. Add the dark brown sugar.

4. Later as the crumbly texture comes together, you can then let it form clumps by lightly squashing and letting it warm slightly in the hand.
5. Sprinkle the clumps onto a non stick baking tray and bake for 10-15 mins, roughly breaking any larger pieces towards the end.

For the Fruit Filling

1. Weigh out all the ingredients for the topping before you begin. Wash, prepare the fruit, removing the tops of the strawberries.

  • 80g brown sugar
  • 1 1/2 tablespoons cornflour

2. Meanwhile, put the dark berry mix (without strawberry) into a large pan.
3. Add the dark brown sugar

4. Take some of the cool berry juice (add a little water if needed) to make a smooth paste with the cornflour. Pour the cornflour paste into the berry mix, stir and set over a medium heat. Begin to cook until the berries just start to release their juices and soften.
5. Then stir in the remaining strawberries and raspberries to coat and soften slightly. 

 

You're Finished! 

Transfer the delicious fruit mix to individual crumble dishes. When the topping is cooked, sprinkle it over the fruit, and serve with with a quark / yoghurt mix, cream or your favourite ice cream.
